This Bluefin Tuna Tataki recipe is simple, elegant, and bursting with flavour. The sesame-crusted tuna is lightly seared and paired with bold garnishes like Kewpie mayo, fresh chilli, and chilli oil. Perfect as an appetizer or a stunning centerpiece for your next seafood feast.

Bluefin Tuna Tataki

Ingredients
  

For the Bluefin Tuna Tataki:

  • 200 g bluefin tuna cut into logs
  • 4 tbsp extra virgin olive oil plus extra for pan
  • 4 tbsp black sesame seeds
  • 4 tbsp white sesame seeds

For Garnishing:

  • 2 spring onion shoots sliced
  • Kewpie mayonnaise
  • Fresh chili thinly sliced
  • Chilli oil
  • Soy sauce
  • Extra sesame seeds optional

Instructions 

  • Heat a non-stick pan over high heat until very hot.
  • Coat the bluefin tuna logs in olive oil, ensuring all four sides are well covered.
  • On a plate, mix the black and white sesame seeds together. Roll the tuna in the sesame seeds, coating all sides evenly.
  • Add a splash of olive oil to the hot pan. Place the sesame-coated tuna in the pan and sear each side for 15 seconds. Turn carefully to avoid breaking the crust.
  • After all sides are seared, place the tuna on a plate and immediately transfer it to the freezer for 3–4 minutes. This halts the cooking process and makes the tuna easier to slice.
  • Using your sharpest knife, slice the bluefin tuna into thin, even pieces. Arrange them neatly on a platter.
  • Garnish with sliced spring onion, Kewpie mayo, fresh chili, a drizzle of soy sauce, and chili oil. Sprinkle with extra sesame seeds for added texture.
