
Ingredients
For the salad:
- 1 handful spinach
- 1/3 cucumber, sliced
- 8 cherry tomatoes, sliced in half
- 1/4 red onion, finely sliced
- 2 tbsp crumbled feta cheese
- 8 tbsp Kalamata olives, sliced
- 100 g smoked fish
- 1 handful sourdough croutons (or substitute with cooled roast veggies like kumara)
- 1 salt and pepper to taste
For the dressing:
- 2 tbsp Greek-style coconut yoghurt (use dairy if you prefer)
- 1 tsp wholegrain mustard (heaped teaspoon)
- 1 A few drizzles of balsamic vinegar
- 2 tsp avocado oil
- 1 salt & pepper to taste
- 1 lemon, juiced for serving
Instructions
- Prepare the Salad Ingredients: In a large bowl, add the spinach, cucumber, cherry tomatoes, red onion, crumbled feta, olives, smoked fish, and sourdough croutons.
- Make the Dressing: In a small bowl, mix together the coconut yoghurt, wholegrain mustard, balsamic vinegar, avocado oil, salt, and pepper until well combined.
- Combine: Pour the dressing over the salad ingredients and toss gently to coat.
- Finish and Serve: Squeeze fresh lemon juice over the salad before serving. Enjoy with a cold beer or your favourite summer drink.
