This smoked fish salad is a light, healthy way to use your smoked fish, making it a perfect dish for summer. Combining fresh veggies, feta, and sourdough croutons with a tangy dressing, it’s a quick and satisfying meal that showcases the smoky flavours.

Smoked Fish Salad

Ingredients
  

For the salad:

  • 1 handful spinach
  • 1/3 cucumber, sliced
  • 8 cherry tomatoes, sliced in half
  • 1/4 red onion, finely sliced
  • 2 tbsp crumbled feta cheese
  • 8 tbsp Kalamata olives, sliced
  • 100 g smoked fish
  • 1 handful sourdough croutons (or substitute with cooled roast veggies like kumara)
  • 1 salt and pepper to taste

For the dressing:

  • 2 tbsp Greek-style coconut yoghurt (use dairy if you prefer)
  • 1 tsp wholegrain mustard (heaped teaspoon)
  • 1 A few drizzles of balsamic vinegar
  • 2 tsp avocado oil
  • 1 salt & pepper to taste
  • 1 lemon, juiced for serving

Instructions 

  • Prepare the Salad Ingredients: In a large bowl, add the spinach, cucumber, cherry tomatoes, red onion, crumbled feta, olives, smoked fish, and sourdough croutons.
  • Make the Dressing: In a small bowl, mix together the coconut yoghurt, wholegrain mustard, balsamic vinegar, avocado oil, salt, and pepper until well combined.
  • Combine: Pour the dressing over the salad ingredients and toss gently to coat.
  • Finish and Serve: Squeeze fresh lemon juice over the salad before serving. Enjoy with a cold beer or your favourite summer drink.
