This Spicy Smoked Fish Spaghetti is a healthy, flavour-packed dish combining the richness of smoked kingfish with fresh vegetables and wholemeal spaghetti. The dish gets its heat from chilli flakes and its zing from fresh lemon juice, creating a perfect balance of smoky, spicy, and fresh flavours. It's a quick and nutritious meal!

Ingredients
- 200 g smoked fish (kingfish or other white fish)
- 200 g wholemeal spaghetti (or normal)
- 8 asparagus stalks, halved
- 1 cup spinach
- 1 cup kale
- 10 cherry tomatoes, halved
- 1 cup broccoli, finely diced
- 1 lemon, juiced
- 1 tsp chilli flakes (adjust to taste)
- 4 cloves garlic, sliced
- 1 tbsp coconut oil
- 1 salt & pepper to taste
- 1 handful fresh parsley (optional for garnish)
Instructions
- Cook the Spaghetti: Bring a pot of salted water to boil and cook the spaghetti according to the package instructions. Drain and set aside.
- Sauté the Vegetables: Heat the coconut oil in a large pan over medium heat. Add the asparagus, broccoli, garlic, and chilli flakes, and cook until softened, about 4-5 minutes.
- Add Cherry Tomatoes: Once the vegetables have softened, add the halved cherry tomatoes to the pan and cook for another 2 minutes until slightly softened.
- Combine the Ingredients: Add the cooked spaghetti, smoked fish, spinach, and kale to the pan. Squeeze the lemon juice over the mixture, season with salt and pepper, and toss everything together until the spinach and kale are wilted and the ingredients are well combined.
- Serve: Remove from heat and serve immediately. Optionally, garnish with fresh parsley for extra flavour.
