This Venison Devilled Sausages recipe is a rich and flavourful take on a comfort food classic. The venison sausages are simmered in a thick sauce made from fruit chutney, Worcestershire sauce, mustard, and maple syrup, paired with sautéed onions, garlic, apple, and chilli for a sweet and spicy kick. Serve over mashed kumara with your favourite vegetables for a hearty and warming meal.

Ingredients
- 6 venison sausages
- 2 brown onions, sliced
- 2 cups beef stock
- 2 tbsp Worcestershire Sauce
- 2 tbsp fruit chutney
- 2 tbsp dijon mustard
- 1 tbsp maple syrup
- 1 green apple, sliced
- 2 red chilli's, sliced
- 3 tomatoes, cut into chunks
- 3 garlic cloves, chopped
- 2 tsp dried thyme
- 1 salt & pepper to taste
- 500 g mashed kumara, for serving
- 1 vegetables, for serving
Instructions
- Brown the sausages: In a hot pan, brown the venison sausages on all sides, then remove and set aside.
- Cook the vegetables: In the same pan, fry the sliced onions, apple, garlic, and chilli until softened.
- Add remaining ingredients: Return the sausages to the pan and add the beef stock, Worcestershire sauce, fruit chutney, Dijon mustard, maple syrup, tomatoes, and thyme. Stir everything together, season with salt and pepper, and bring to a simmer.
- Simmer the dish: Let the sausages and sauce simmer for 20-30 minutes, allowing the sauce to thicken to your liking. The longer you simmer, the thicker the sauce will be.
- Serve: Serve the devilled sausages over mashed kumara with vegetables on the side.
