This summer peach, walnut, feta, and avocado salad is fresh, simple, and packed with flavour. Ready in under 15 minutes, it’s the perfect mix of sweet, salty, and creamy—ideal for a light meal or a side dish that won’t slow you down.

Peach, Walnut, Feta and Avocado Salad

Ingredients
  

Ingredients:

  • 5 cups spinach washed and dried
  • 1 small red onion thinly sliced
  • 1 large avocado diced
  • 4 peaches sliced
  • ½ cup walnuts chopped
  • ½ cup goat feta
  • salt/pepper to taste

For The Dressing:

  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tsp dijon mustard

Instructions 

  • Add all dressing ingredients together into a small bowl and whisk together until combined.
  • Add the walnuts into a small fry pan and toast for 3-5 minutes until they go a little brown and crunchy.
  • In a large mixing bowl add the spinach and onion. Pour 3/4 the dressing on top of the spinach and toss together until well combined.
  • On a large serving plate add the spinach mixture and top with the diced avocado, peach slices, toasted walnuts and then crumble the goats feta on top. Drizzle the remaining dressing over the salad.
